What to do with extra egg whites? That question was answered last week with a cloud cookie recipe on Gothamist. I had extra egg whites because I made peaches and cream ice cream a few days ago.
The cookies only have four ingredients and were ridiculously easy to make: whip up a meringue, fold in chocolate chips, plop on cookie sheets, put in a pre-heated oven and turn the oven off. Leave in the oven overnight and the next morning you'll have tasty chocolate chip meringue cookies. The cookies are more white than yellow, that shade is just me not adjusting the camera's white balance.
