When I lived in NYC, I'd occasionally see these big puffs of dark smoke released from building rooftops. I could never figure out what they were. Garbage incinerators? Smoke from a heating system? No idea.

it really would be nice to have a concrete answer about that. surely someone, somewhere knows? like at Columbia for instance?

It's magic I tell you! My alternative explanation is that the smoke comes from when oil-fired boilers start up.
